National Blueberry Pie Day

In honor of National Blueberry Pie Day I made a classic blueberry pie recipe from SimpleRecipes.com. The recipe calls for 6 cups of fresh or frozen blueberries. I used frozen blueberries as fresh blueberries are very expensive in April in my local grocery store. Note that if you use frozen berries make sure you plan extra time for letting them thaw before filling your pie. I used my new white Le Creuset Pie Dish and my Blueberry Pie Funnel which gets inserted in the middle of the pie to vent the steam. I am happy to report that no juices bubbled over the sides. Now I cannot claim that this blueberry pie is good for you with ½ cup of sugar and 2 tablespoons of butter, but there must be some benefit to all those blueberries.
